Shrimp Scampi Fettuccine



You will need:

3/4 pound of uncooked shrimp. Peel and deveined also remove the tail.
4 ounces fettuccine
1 tablespoon of olive oil or vegetable oil.
1 medium green onion cut about a tablespoon.
1 clove garlic chopped finely.
2 teaspoons of chopped fresh or 1/2 teaspoon of dried basil leaves
2 teaspoons of chopped fresh parsly or 3/4 teaspoon
1 tablespoon of Lemon juice
1/8 salt
Grated Parmesan cheese if desired.

1. Rinse shrimp with cold water, pat dry with paper towels. Set aside.

2. Cook and drain fettuccine as it says on the package. Keep warm.

3.While fettuccine is cooking, heat the oil in 10-inch skillet over medium heat. Cook shrimp, onion, garlic, basil, parsley, lemon juice and salt in oil 2 to 3 minutes, stir frequently. Just til shrimp are pink and firm ( do not overcook)
Remove skillet from heat.

4. Add fettuccine to skillet; toss fettuccine and shrimp mixture in skillet. Sprinkle with cheese.

This looks great! I was thinking about making it for my mom. Her birthday is Saturday and shrimp is her favorite. Plus, she'll love the fact that she doesn't have to be the one to cook.
